Apple Coleslaw

Preparation time:

Yield: 4 to 6 servings

INGREDIENTS
½ head green cabbage, finely chopped, about 4-6 cups 1 L to 1.5 L
2 each, carrots and celery stalks, finely diced 2
1 apple, cored and finely chopped 1
½ each, small red onion and red pepper, finely chopped ½
¼ cup fresh parsley, chopped 50 mL
1 tbsp dijon mustard 15 mL
½ tsp each, celery seed, salt and pepper 2 mL
1/3 cup light mayonnaise 75 mL
1 cup Astro Plain Yogourt, 1% or 2% 250 mL

PREPARATION
  1. Combine all ingredients in a large bowl and toss until thoroughly mixed.
  2. Serve immediately or refrigerate until ready to serve.
  3. Will keep up to two days.
