Baked Chicken Fingers

INGREDIENTS

Approx. 1 lb   boneless, skinless chicken breast 450 g approx
 
Marinade:
1 cup Astro Original Balkan Style 3% Plain yogourt 250 mL
½ tsp salt 2.5 mL 2 mL
½ tsp each black pepper, garlic powder, paprika, dried mustard 1.2 mL each
 
Bread Crumb Coating:
1 cup bread crumbs 250 mL
½ tsp salt 2.5 mL
½ tsp each black pepper, garlic powder, onion powder, paprika, dried parsley, dried oregano 1.2 mL each

PREPARATION

  1. For marinade cut chicken breast into strips. In a glass or stainless steel container blend Astro yogourt, salt, pepper, garlic powder, paprika and dried mustard. Add chicken and allow to marinate in refrigerator for at least a few hours.
  2. Preheat oven to 350°F. Lightly grease a baking sheet or line with parchment paper.
  3. In a shallow dish blend breadcrumbs, salt, pepper, garlic and onion powder, paprika, parsley and oregano. Using a fork, tongs or your fingers remove one strip at a time from marinade and completely coat in breadcrumb mixture. Place evenly on prepared baking sheet.
  4. Bake for 15 minutes, turn chicken fingers over and continue baking an additional 10 minutes until browned and cooked through. Serve immediately.

ADDITIONAL NOTES

  • Replace Astro Original Balkan Style 3% Plain yogourt for any other Astro Plain yogourt.
  • Replace the seasonings in the breadcrumb mixture to suit your tastes (i.e. oregano for thyme).
  • Replace chicken breast with pork loin and proceed as directed.
