Banana Muffins

INGREDIENTS
| 3 | ripe bananas | 3 |
| 2 | eggs, large | 2 |
| ½ cup | Astro Original Balkan Style Plain Yogourt | 125 mL |
| 1 cup | granulated white sugar | 250 mL |
| 1½ cups | all purpose flour | 375 mL |
| 1 tsp | salt | 5 mL |
| 1 tsp | baking soda | 5 mL |
PREPARATION
- Preheat oven to 350°F. Grease 12-cup muffin tin or line with muffin paper.
- In large bowl, mash bananas with a spoon, fork or potato masher. Add eggs and Astro yogourt and mix well. Add sugar, flour, salt and baking soda and mix until all the flour has been incorporated.
- Divide evenly between the muffin cups.
- Bake for 15-20 minutes until muffins are lightly brown and tops spring back when gently pressed.
- Cool for 10 minutes and remove from muffin tins.
ADDITIONAL NOTES
- Replace Astro Original Balkan Style Plain yogourt for Astro Original Balkan Style 3% Plain or Astro Original Balkan Style Naturally Flavoured French Vanilla.
- Add ½ cup (125 ml) of chocolate chips at the end of Step 2.
- Add ½ cup (125 ml) of chopped pecans at the end of Step 2.
- Add ½ cup (125 ml) of frozen or fresh blueberries at the end of Step 2.
- Make Banana Bread by pouring batter into a greased loaf pan. Bake for 45-60 minutes until a toothpick inserted in center comes out clean.
