Chicken Salad Wrap
Makes 8 servings
INGREDIENTS
| 2 cups | cooked, cold, shredded or diced chicken | 500mL |
| 1 cup | chopped red pepper, (about 1 pepper) | 250 mL |
| 1 | Granny Smith apple, cored and chopped | 1 |
| 1 cup | Astro Original Balkan Style Plain yogourt | 250 mL |
| ¼ cup | chopped red onion (soaked for 10 minutes in cold water) | 62.5 mL |
| 2 tbsp | chopped cilantro | 30 mL |
| 1 tbsp | quince preserves (you can use plum) | 15 mL |
| 1 tsp | cumin | 5 mL |
| 1 | head of romaine, chopped | 1 |
| 8 | tortilla wraps | 8 |
| salt and (lots) pepper to taste |
PREPARATION
- In a medium bowl, mix Astro Original yogourt and all other ingredients except lettuce and wraps, together.
- To serve, place ¼ cup of chicken mixture down the center of 1 tortilla. Top with ¼ cup lettuce. Roll tortilla over itself to form a wrap. Repeat with remaining ingredients.
ADDITIONAL NOTES
An excellent way to use up leftover chicken!
