Cranberry Orange Scones

INGREDIENTS

2 ½ cups all purpose flour 625 mL
1/3 cup granulated sugar 75 mL
1 tbsp each grated orange rind & baking powder 15 mL
1 tsp cinnamon 5 mL
1/3 cup Lactantia butter or Lactantia Healthy Attitude Margarine 75 mL
1 ¼ cups Astro Original Balkan Style Plain yogourt, 1% or 2% 300 mL
½ cup dried cranberries 125 mL
HONEY YOGOURT SPREAD
1 tub Astro Original Balkan Style Plain yogourt, 1% or 2% 1 tub
2-3 sheets paper towel 2-3
2 tbsp honey 30 mL

PREPARATION

  1. Mix flour, sugar, orange rind, baking powder and cinnamon in bowl. Mix in Lactantia butter with fork until resembles course meal. Combine Astro Original Plain yogourt and cranberries; stir into dry ingredients just until mixture comes together.
  2. Gather into a ball and knead gently 3 to 4 times on a lightly floured surface. Place on greased baking sheet and pat into 9-inch circle.
  3. Bake at 400°F [200°C] for 25 to 30 minutes or until well-risen and golden brown.
  4. Slice warm scone in half, top with Honey Yogourt Spread and fresh fruit.
    Honey Yogourt Spread
  1. Drain 1 tub (750 g) Astro Original Plain yogourt in sieve lined with 2 to 3 sheets of paper towel for 30 minutes.
  2. Stir honey into Astro Original plain yogourt.
  3. Refrigerate until ready to use.

ADDITIONAL NOTES

  • Substitute currants, sultana raisins, chopped dried figs or dates instead of the cranberries.
  • Substitute pumpkin pie spice for ground cinnamon.
