Decadent Chocolate Cupcakes
Makes 12
INGREDIENTS
| 1 | stick Lactantia butter, softened | 1 |
| ½ cup | strong coffee | 125 mL |
| ¼ cup | cocoa powder | 62.5 mL |
| 1 cup | sugar | 250 mL |
| ½ cup | Astro Original Balkan Style Vanilla yogourt | 125 mL |
| 1 | egg | 1 |
| 1 tsp | vanilla extract | 5 mL |
| 1 cup | flour | 250 mL |
| ½ tsp | baking soda | 2.5 mL |
| Frosting: | ||
| 1 cup | chocolate chips | 250 mL |
| ¼ cup | Astro Original Balkan Style Vanilla yogourt | 62.5mL |
PREPARATION
For cupcakes:
- Preheat oven to 400°F.
- In a large bowl, mix Lactantia butter, coffee, cocoa. Add sugar and Astro Original yogourt and mix until combined. Add egg and vanilla extract.
- Sift in flour and baking soda and mix until just combined.
- Bake in paper lined muffin tin for 15-20 minutes of until a toothpick inserted comes out clean. Remove from oven and let cool.
For frosting:
- In a small bowl, melt chocolate.
- Stir in Astro Original yogourt and mix until combined. Chill for 10-15 minutes.
- Spread onto cooled cupcakes
