Dijon Chicken

INGREDIENTS
| 4 | 4 ounce boneless, skinless chicken breast halves | 112 g |
| 2 tbsp | Dijon mustard | 30 mL |
| ½ cup | Astro Original Balkan Style 0% Plain yogourt | 125 mL |
| 1 cup | seasoned breadcrumbs | 250 mL |
| 1 tbsp | Lactantia butter | 15 mL |
| 2 tbsp | olive oil | 30 mL |
| salt and freshly ground pepper to taste |
PREPARATION
- Coat each chicken breast with mustard. Sprinkle with salt and pepper, spread Astro yogourt carefully on all chicken breasts, both sides. Dip into seasoned bread crumbs.
- Add Lactantia butter and olive oil to large sauté pan. Heat over medium high. Add chicken breasts and saute 5 minutes on each side or until chicken is cooked and coating is brown. Place on paper towels to drain.
- Serve over a Caesar salad.
