Easy Chicken Curry

INGREDIENTS
| 2 tbsp | curry powder | 30 mL |
| 2 tbsp | vegetable oil | 30 mL |
| 1 lb | boneless skinless chicken breast, cubed | 500 g |
| 1 | onion, finely chopped | 1 |
| 1 | red pepper, cut into strips | 1 |
| 2 | stalks celery, thinly sliced | 2 |
| 2 | leeks, thinly sliced | 2 |
| 1½ cups | Astro Original Balkan Style Plain yogourt, 2% or 3% | 375 mL |
| 1 tbsp | cornstarch | 15 mL |
| Cucumber Rayta: | ||
| 1 tsp | ground cumin | 5 mL |
| 1 cup | Astro Original Balkan Style Plain yogourt, 2% or 3% | 250 mL |
| 1 | seedless cucumber, peeled and finely diced | 1 |
| 1 | tomato, finely diced | 1 |
| ¼ cup | diced green onion or cilantro | 50 mL |
PREPARATION
- Brown chicken in oil in large non-stick fry pan over medium heat. Add vegetables; cook until softened.
- Stir cornstarch and curry powder into Astro yogourt. Add to pan; bring to a boil and simmer for 2 to 3 minutes. Season to taste.
- Serve with 4 serving size flavoured rice mix.
- Cucumber Rayta: a cooling accompaniment for the Chicken Curry
- Heat cumin over low heat in fry pan for 5 minutes. Add to remaining ingredients.
- Chill for at least 1 hour before serving.
