Feta Yogourt Spread

This delicious feta yogourt spread can be served with either grilled or toasted Greek-style pita wedges.
1 tub (750 mL) Astro Original Balkan Plain 6% yogourt
1 cup (140 g) crumbled feta cheese
½ cup (125 mL) finely chopped fresh mint
3 tbsp (45 mL) extra-virgin olive oil, divided
1 small clove garlic, minced
1 tsp (5 mL) each lemon juice and grated lemon zest
1 pinch each salt and pepper
- Pour Astro Original yogourt into cheesecloth-lined sieve set over a bowl; cover with plastic wrap, refrigerate and let drain for 1½ hours to make about 2 cups.
In a bowl, stir together Astro Original yogourt, feta cheese, mint, all but 2 tsp of the oil, garlic, lemon juice, lemon zest, salt and pepper. Scrape into a serving bowl; drizzle with remaining oil.
