Fresh Fruit Cobbler

INGREDIENTS

6 cups fresh strawberries, halved 1.5 L
3 tbsp granulated white sugar 45 mL
2 tbsp quick-cooking tapioca 30 mL
¼ cup Beatrice apple juice 60 mL
1 tsp almond extract 5 mL
 
Crust:
1 ¼ cup  all purpose flour 300 mL
2 tsp baking powder 10 mL
¼ cup granulated white sugar 60 mL
¼ cup Lactantia butter or Lactantia Healthy Attitude margarine, melted 60 mL
½ cup Astro Original Balkan Style Plain yogourt 125 mL

PREPARATION

  1. Preheat oven to 425°F. Lightly grease an 8 inch pan
  2. In a large bowl, gently mix together strawberries, sugar, and tapioca. Pour filling into prepared dish.
  3. In another large bowl combine flour, baking powder, sugar, Lactantia butter and Astro yogourt. Beat with a wooden spoon until a stiff dough forms, about 30 seconds.
  4. Spoon yogourt dough on top of filling to achieve a cobbled effect.
  1. Bake for 20-25 minutes or until crust is lightly browned. Allow to cool for 20-30 minutes before serving or can be cooled completely and gently reheated upon serving.

ADDITIONAL NOTES

  • Replace Astro Original Balkan Style Plain yogourt with Astro Original Balkan Style 3% Plain yogourt, Astro Original Balkan Style 2% Plain yogourt or Astro Original Balkan Style 1% Plain yogourt.
  • Replace Strawberries for Peach, Apricot and Cherry Cobbler.
