Guacamole

Makes approximately 1 ½ cups (350 mL)

INGREDIENTS

1 avocado, ripe, pitted and peeled 1
½ lemon, juiced ½
1 clove garlic, minced 1
¼ tsp salt 1.2 mL
¼ tsp black pepper 1.2 mL
10 drops, Tabasco sauce 10
2 tbsp minced red onion 30 mL
½ cup Astro Original Balkan Style Plain yogourt 125 mL

PREPARATION

  1. In a small bowl mash avocado with a fork. Add lemon juice and blend well. Add garlic, salt, pepper, Tabasco, onion and mix well.
  2. Add Astro yogourt and mix until well combined. Adjust seasoning to taste. Can be used immediately, however flavors will develop upon standing. Cover and refrigerate any leftover Guacamole for up to two days.

ADDITIONAL NOTES

  • To pit and peel a ripe avocado for guacamole. With a sharp knife cut lengthwise around pit. With hands on each cut half twist in opposite directions. Avocado should open up to reveal pit. Remove pit. Over a small bowl squeeze each half of the avocado and fruit will easily come loose and fall into bowl. Continue as directed above.
  • Use as a dip for vegetables and tortilla chips, or spread for sandwiches.
  • Replace Astro Original Balkan Style Plain yogourt for any other Astro Plain yogourt. Using a lower fat will result in a thinner Guacamole.
  • Replace yogourt with drained yogourt for a thicker, creamier Guacamole. Place 1 cup (250 mL) of yogourt in a coffee filter or cheesecloth-lined strainer. Let stand over a bowl for about 2 hours. Discard accumulated liquid. Measure required drained yogourt. Any remaining drained yogourt can be kept covered and refrigerated for up to one week.
  • Add ½ cup (125 mL) diced, seeded fresh tomato.
