Homestyle Chicken and Broccoli Casserole

INGREDIENTS

4 4 oz. (112 g) boneless, skinless chicken breasts 4
1 tbsp olive oil 15 mL
3 cups broccoli, steamed 750 mL
3 tbsp Lactantia butter 45 mL
2 tbsp flour 30 mL
1 ½ cups chicken stock 375 mL
1 cup Astro Original Balkan Style 2% Plain yogourt* 250 mL
½ cup Black Diamond old cheddar cheese, grated 125 mL
  salt and pepper to taste

PREPARATION

  1. Place olive oil in large skillet and turn heat to medium high. Place chicken breasts in skillet and sauté each side for 5 minutes. Remove from pan.
  2. Steam broccoli.
  3. In a saucepan melt Lactantia butter over medium heat, add flour and cook 1 minute. Add chicken stock and cook until thickened. Season with salt and pepper. Whisk Astro yogourt and add to chicken stock, add Black Diamond cheddar cheese and cook until melted.
  4. Place broccoli in 2 qt. (2 L) casserole. Place chicken breasts over broccoli and pour sauce over chicken and broccoli.
  5. This recipe can be made ahead.
  6. When ready to cook bring to room temperature. Preheat oven to 375°F (190°C) and cook casserole until it is bubbling and hot, approximately 25 minutes.
  7. Serve over rice.

ADDITIONAL NOTES

  • You can use any Astro Original Balkan Style Plain yogourt product in this recipe.
