Mint Mango Marinade
Preparation time:

Makes 1 ½ cups (350 mL)
INGREDIENTS
| 1 cup | Astro Original Balkan Style 2% Plain yogourt | 250 mL |
| ½ | ripe mango, peeled and diced | ½ |
| OR | ||
| ? cup | mango juice | 75 mL |
| 2 tbsp | fresh mint leaves | 30 mL |
| 1 tsp | mustard powder | 5 mL |
| ½ tsp | salt | 2.5 mL |
| ¼ tsp | pepper | 1.2 mL |
| 1 tsp | honey | 5 mL |
PREPARATION
- In food processor or blender mix all ingredients until smooth. Can be used immediately. Cover and refrigerate any leftover marinade.
ADDITIONAL NOTES
- Never reuse marinade that has come in contact with raw chicken or seafood.
- Marinate chicken breasts for up to 2 hours. Chicken can then be baked or grilled.
- Marinate shrimp for up to 2 hours. Shrimp can then be baked or grilled.
- Marinate pork tenderloin for up to 2 hours. Pork can then be baked or grilled.
- Use as a dressing for a great summer salad: 4 cups prepared red leaf lettuce, 1 sliced red pepper, 2 peeled and sliced peaches (nectarines or additional mango sliced can also be used). Toss with desired amount of marinade and garnish with a slice of lime.
- Replace Astro 2% Plain Yogourt for any other Astro Plain yogourt.
- Add 1 tbsp (15 mL) sesame oil for an oriental twist. Use as directed below.
- Add 1 tsp to 1 tbsp (5-15 mL) chili-garlic sauce to spice up the marinade.
