Nutty Banana Lemon Muffin

INGREDIENTS
| 2 cups | all purpose flour | 500 mL |
| ? cup | packed brown sugar, divided | 150 mL |
| ? cup | quick cooking oatmeal, divided | 150 mL |
| 1 tbsp | baking powder | 15 mL |
| 1 cup | Astro Original Balkan Style plain yogourt, 1% or 2% | 250 mL |
| 1 cup | mashed ripe bananas | 250 mL |
| ½ cup | toasted chopped pecans or almonds | 125 mL |
| ¼ cup | vegetable oil | 50 mL |
| 1 | egg | 1 |
| 2 tsp | lemon rind | 10 mL |
PREPARATION
- Set aside 2 tbsp [30 mL] each of brown sugar and oatmeal. In a bowl mix flour, remaining brown sugar, remaining oatmeal and baking powder.
- In another bowl, mix Astro Original plain yogourt, banana, nuts, oil, egg and lemon rind. Stir wet ingredients into flour mixture until just blended.
- Spoon batter into 12 cup greased muffin tin. Mix together reserved brown sugar and oatmeal; sprinkle over muffins.
- Bake at 400°F [200°C] for 20 to 25 minutes or until well-risen and golden brown.
