Saucy Mango Chicken

INGREDIENTS
| ½ cup | Astro Original Balkan Style 0% Plain yogourt | 125 mL |
| 1 | lime, juiced | 1 |
| 1 tsp | honey | 5 mL |
| ¼ tsp | each paprika, cumin and salt | 1.2 mL |
| 1 tsp | chopped fresh coriander (or ½ tsp dried) | 5 mL |
| 2 | boneless, skinless chicken breasts, cut into strips or chunks | 2 |
| 2 tsp | vegetable oil | 10 mL |
| 2 | green onion, chopped | 2 |
| ½ | mango, peeled, seeded and chopped | ½ |
| ½ | red bell pepper, sliced | ½ |
| 1 | clove garlic, minced | 1 |
| 1 tsp | minced fresh ginger | 5 mL |
PREPARATION
- For sauce: in a small bowl blend together Astro yogourt, lime juice, honey, paprika, cumin, salt and coriander. Set aside.
- For Mango chicken: in large non-stick skillet heat oil over medium-high heat. Add chicken and sauté for about 3 minutes. Add red pepper, garlic and ginger. Sauté for an additional 3 minutes. Add mango and green onion and sauté for an additional 3 minutes or until chicken is cooked and vegetables are tender.
- Turn down heat to low and gently add prepared sauce. Heat just until warm and remove from heat. Serve immediately.
ADDITIONAL NOTES
- Allow Mango Chicken mixture to cool before adding sauce. Serve over bed of lettuce for a refreshing cold chicken salad.
- Add more garlic, ginger or seasonings as desired.
- Use a whole mango for a stronger mango flavour.
