Saucy Mango Chicken

INGREDIENTS

½ cup Astro Original Balkan Style 0% Plain yogourt 125 mL
1 lime, juiced 1
1 tsp honey 5 mL
¼ tsp each paprika, cumin and salt 1.2 mL
1 tsp chopped fresh coriander (or ½ tsp dried) 5 mL
2 boneless, skinless chicken breasts, cut into strips or chunks 2
2 tsp vegetable oil 10 mL
2 green onion, chopped 2
½ mango, peeled, seeded and chopped ½
½ red bell pepper, sliced ½
1 clove garlic, minced 1
1 tsp minced fresh ginger 5 mL

PREPARATION

  1. For sauce: in a small bowl blend together Astro yogourt, lime juice, honey, paprika, cumin, salt and coriander. Set aside.
  2. For Mango chicken: in large non-stick skillet heat oil over medium-high heat. Add chicken and sauté for about 3 minutes. Add red pepper, garlic and ginger. Sauté for an additional 3 minutes. Add mango and green onion and sauté for an additional 3 minutes or until chicken is cooked and vegetables are tender.
  3. Turn down heat to low and gently add prepared sauce. Heat just until warm and remove from heat. Serve immediately.

ADDITIONAL NOTES

  • Allow Mango Chicken mixture to cool before adding sauce. Serve over bed of lettuce for a refreshing cold chicken salad.
  • Add more garlic, ginger or seasonings as desired.
  • Use a whole mango for a stronger mango flavour.
