Sautéed Zucchini with Yogourt Sauce

INGREDIENTS
| SAUCE: | ||
| 1 cup | Astro Original Balkan Style 1% Plain yogourt | 250 mL |
| ¼ cup | chopped green onions, scallions or chives | 60 mL |
| ¼ tsp | salt | 1.2 mL |
| ¼ tsp | black pepper | 1.2 mL |
| ZUCCHINI: | ||
| 2 | medium zucchini, sliced into discs | 2 |
| 1 | clove garlic, minced | 1 |
| 2 tbsp | olive oil | 30 mL |
PREPARATION
- For sauce: in a small bowl blend together Astro yogourt, green onions, salt and pepper. Set aside.
- For zucchini: In large non-stick skillet heat olive oil over medium-high heat. Add zucchini and sauté for 5 minutes. Add garlic and continue sautéing until zucchini is tender and lightly browned. Remove from heat and add sauce tossing lightly to coat. Serve immediately.
ADDITIONAL NOTES
- Replace Astro Original Balkan Style 1% Plain yogourt for any other Astro plain yogourt.
- For Grilled Zucchini: toss sliced zucchini with garlic and olive oil and cook in a basket wok on the BBQ over medium heat until zucchini is tender. Transfer to a serving dish as spoon sauce over grilled zucchini.
- Add other chopped fresh herbs to sauce as desired.
- Mix zucchini and sliced fresh mushrooms and sauté or grill as directed above
