Southwest Salad with Dressing
Preparation time:
Salad: 25 minutes minimum
Dressing: 10 minutes

INGREDIENTS
| SALAD: | ||
| 10 cups | red leaf lettuce (about 2 heads), torn washed and dried | 2.5 L |
| 1 | red pepper | 1 |
| ½ | red onion, sliced | ½ |
| 1 cup | fresh tomatoes, diced | 250 mL |
| ½ cup | Black Diamond Sargento sharp cheddar shredded cheese | 125 mL |
| ½ cup | crushed tortilla chips | 125 mL |
| ½ cup | Southwest Salad Dressing | 125 mL |
| VINAIGRETTE: | ||
| 1 cup | Astro Original Balkan Style Plain yogourt | 250 mL |
| ½ cup | Lactantia 1% milk | 125 mL |
| 1 oz | package dried ranch dressing and/or dip mix | 28 g |
| ½ cup | BBQ sauce, original or plain styles work best | 125 mL |
PREPARATION
- For Salad: In a large bowl add all ingredients. Toss together until all ingredients are evenly coated with dressing.
- If preparing in advance; add tortilla chips, dressing and toss right before serving or the salad will get soggy.
- For Dressing: In a plastic container with tight fitting lid mix Astro yogourt and Lactantia milk until smooth. Add Ranch mix and blend well. Cover and let sit for a minimum of 20 minutes to allow flavours to blend.
- Add BBQ sauce and mix well. Can be used immediately or stored, covered in the refrigerator for up to two weeks.
ADDITIONAL NOTES
- Replace lettuce with 4 cups of cooked and cooled long grain rice, remove tortilla chips and add one can of drained, black beans for a great Southwest Rice Salad.
- Prepare salad as above divide between six flour tortillas and wrap them up for a great lunch on the go.
- Omit Beatrice milk and increase total Astro Original Balkan Style Plain yogourt used by ½ cup.
