Southwest Salad with Dressing

Preparation time:
Salad: 25 minutes minimum
Dressing: 10 minutes

INGREDIENTS

SALAD:  
10 cups red leaf lettuce (about 2 heads), torn washed and dried 2.5 L
1 red pepper 1
½ red onion, sliced ½
1 cup fresh tomatoes, diced 250 mL
½ cup Black Diamond Sargento sharp cheddar shredded cheese 125 mL
½ cup crushed tortilla chips 125 mL
½ cup Southwest Salad Dressing 125 mL
 
VINAIGRETTE:  
1 cup Astro Original Balkan Style Plain yogourt 250 mL
½ cup Lactantia 1% milk 125 mL
1 oz package dried ranch dressing and/or dip mix 28 g
½ cup BBQ sauce, original or plain styles work best 125 mL

PREPARATION

  1. For Salad: In a large bowl add all ingredients. Toss together until all ingredients are evenly coated with dressing.
  2. If preparing in advance; add tortilla chips, dressing and toss right before serving or the salad will get soggy.
  3. For Dressing: In a plastic container with tight fitting lid mix Astro yogourt and Lactantia milk until smooth. Add Ranch mix and blend well. Cover and let sit for a minimum of 20 minutes to allow flavours to blend.
  1. Add BBQ sauce and mix well. Can be used immediately or stored, covered in the refrigerator for up to two weeks.

ADDITIONAL NOTES

  • Replace lettuce with 4 cups of cooked and cooled long grain rice, remove tortilla chips and add one can of drained, black beans for a great Southwest Rice Salad.
  • Prepare salad as above divide between six flour tortillas and wrap them up for a great lunch on the go.
  • Omit Beatrice milk and increase total Astro Original Balkan Style Plain yogourt used by ½ cup.
