Tzatziki is a yogourt based sauce and can be used as a dressing, dip, marinade and spread. The cooling flavour of tzatziki is also perfect for spicy dishes.


3 cups (750 mL) Astro Original Balkan Plain 6% yogourt
2 tbsp (30 mL) shredded cucumber, peeled and seeded 
½ tsp (2.5 mL) sugar 
¼ tsp (1.2 mL) dried dill weed
½ tsp (2.5 mL) minced fresh garlic 
1 tsp (5 mL) salt 
5 tsp (25 mL) fresh lemon juice


  1. Place Astro Original yogourt in a coffee filter or cheesecloth-lined strainer. Let stand over a bowl for about 4 hours. Discard accumulated liquid. Drained yogurt should measure about 1½ cups (350 mL).
  2. In a small bowl combine drained Astro Original yogourt, shredded cucumber, sugar, dill, garlic, salt and lemon juice. Stir until well combined. Cover and refrigerate for at least one hour to allow flavors to develop. Any leftover Tzatziki can be kept covered and refrigerated for up to one week. Stir before using.
