Traditional Tzatziki

INGREDIENTS
| 3 cups | Astro Original Balkan Style Plain yogourt | 3 cups |
| 2 tbsp | shredded cucumber, peeled and seeded | 30 mL |
| ½ tsp | sugar | 2.5 mL |
| ¼ tsp | dried dill weed | 1.2 mL |
| ½ tsp | minced fresh garlic | 2.5 mL |
| 1 tsp | salt | 5 mL |
| 5 tsp | fresh lemon juice | 25 mL |
PREPARATION
- Place Astro yogourt in a coffee filter or cheesecloth-lined strainer. Let stand over a bowl for about 4 hours. Discard accumulated liquid. Drained yogurt should measure about 1 ½ cups (350 mL). It is okay if there is a little more or a little less yogourt.
- In a small bowl combine drained Astro yogourt, shredded cucumber, sugar, dill, garlic, salt and lemon juice. Stir until well combined. Cover and refrigerate for at least one hour to allow flavors to develop. Any leftover Tzatziki can be kept covered and refrigerated for up to one week. Stir before using.
ADDITIONAL NOTES
- As a dressing for your favourite garden salad.
- As a dip for pita bread, crackers and vegetables.
- As a spread for sandwiches.
- As a marinade for meat.
- Do not replace Astro Original Balkan Style Plain yogourt with any other plain yogourt; texture and flavour will be significantly altered.
- Adjust any other ingredients to your taste.
- For an even more authentic Tzatziki, allow shredded cucumber to drain for about 20 minutes and squeeze excess moisture out. To use this method start with 4 tbsp (60 mL) of shredded cucumber that has been peeled and seeded. Continue as directed above.
