Vanilla Chocolate Coconut Bars

Ingredients

  • Vanilla:
  • 2 cups (500mL) all-purpose flour
  • 1 cup (250mL) unsweetened medium desiccated coconut
  • 1/3 cup (75mL) granulated sugar
  • 6 tbsp (90 mL) vanilla protein powder (2 scoops)
  • 1tsp (5mL) baking powder
  • 1 1/2 cups (375mL) Astro® Original Balkan Vanilla yogourt
  • 1/2 cup (125mL) Lactantia® PurFiltre® 2% milk
  • 1/2 cup (125mL) melted coconut oil
  • 1 egg
  • Chocolate:
  • 2 cups (500mL) all-purpose flour
  • 1 cup (250mL) unsweetened medium desiccated coconut
  • 1/3 cup (75mL) granulated sugar
  • 1tsp (5mL) baking powder
  • 1 1/2 cups (375mL) Astro® Original Balkan Vanilla yogourt
  • 1/2 cup (125mL) Lactantia® PurFiltre® 2% milk
  • 1/2 cup (125mL) melted coconut oil
  • 1 egg
  • 4oz (125g) bittersweet chocolate, melted

Preparation

  1. Preheat oven to 375°F (190°C). Lightly grease 13- x 9-inch (3.5 L) metal cake pan.
  2. Vanilla: In a large bowl, combine flour, coconut, sugar, protein powder and baking powder. In another bowl, whisk together Astro Original Balkan Vanilla yogourt, milk, oil and egg. Pour over dry ingredients and stir just until combined. Spread into prepared pan and set aside.
  3. Chocolate: In a large bowl, combine flour, coconut, sugar and baking powder. In another bowl, whisk together Astro Original Balkan Vanilla yogourt, milk, oil, egg and chocolate. Pour over dry ingredients and stir just until combined. Carefully spread chocolate mixture on top of vanilla mixture. Bake for 45 to 50 minutes or until a tester inserted into the cake comes out clean. Cut into bars. These freeze well.
